Inspired by Havana’s legendary El Draque, our Mojito is the beating heart of The Republic. A timeless blend of rum, sugarcane syrup, lemon, and fresh mint, harmonized to perfection.

This is the original Fierro–Aguado family recipe, passed down through generations and served for over 40 years at the iconic Atahualpa restaurant in Liège.

How to serve:
1. Add a few fresh mint leaves to your glass.

After an unforgettable visit to Rio, we tasted the best Caipirinhas in the favelas and perfected our own recipe, bold, refreshing, and true to its Brazilian soul.

The Margarita is a tequila-based classic, blending lime juice and orange liqueur for a bright, refreshing experience. Its origins trace back to Mexico in the 1930s–40s, but what truly makes ours unique is family heritage.

With roots on Venezuela’s Margarita Island, where every beach bar serves this iconic cocktail on white sands, we perfected our recipe using our family’s tradition bright, refreshing, and timeless, inspired by the shores of Margarita Island.

How to serve:
1. Wet the rim of your glass (with water or ice) and dip it in sea salt or Tajín.
2. Add ice to the glass.
3. Pour the chilled cocktail over the ice.

The Pisco Sour is a cocktail claimed by both Chile and Peru, each celebrating it as a national treasure. Beyond the rivalry, it stands as a shared heritage born from South America’s rich viticultural tradition and the fusion of European and local influences.

Our recipe honors this legacy and our own roots: the Fierro family originates from Chile, where Pisco is more than a drink it’s a symbol of sun, history, and conviviality. On Easter Island, Pisco is famously served in Moai-shaped bottles, capturing the timeless, mysterious vibe of this remote paradise. We won’t serve ours in a Moai (unfortunately), but every sip carries that same spirit of authenticity and adventure.
